I've a fridge full of vegetables and not a clue what to do with them all

I've been meaning to cut back on the meat we eat and today I went and bought a truck load of veg. I've come home and realised that I'm not sure what I will cook with them all.
The only solid meal ideas I have, are: peppers stuffed with beans
Carrot and coriander soup
Spicy parsnip soup
Some mushrooms dish (stroganoff maybe)
any vegetable laden recipe idea are welcome, I probably have the vegetables for it.

Roast them and serve in plate sized Yorkshire puddings (made in cake tins)

Thanks, I do have a tagine and a "bung it all in and see what happens" approach suits me down to the ground.

You can steam and freeze fresh veg for later use in soups, stews, mash, fritatas etc
