They're nice as wedges. Or mixed with other root veg as mash. Sweet potato curry's good.

HarrietSchulenberg · 26/08/2012 02:28

Yup, wedges are lovely, and mashed with cream cheese, and mashed as topping for shepherd's pie.

Binfullofmaggotsonthe45 · 26/08/2012 02:46

I make a nice soup, with carrots and coriander.

Or substitute for any potato base in a recipe.

I've had pie, but never cooked it.

peel and cut into skinny chips, soak in cold water for 30 mins then drain and pat dry.

toss in seasoned corn flour, shaking off the excess and deep fry in small batched for 3/4mins, serve with dips of your choice alongside burgers etc

not my original recipe but it's bloody lovely!

Llareggub · 26/08/2012 13:16

I use them in curries with peas.

Anni37 · 26/08/2012 15:36

Cumin goes so well with sweet potatoes, the below is delicious and really easy - try it

Peel, chop into chunks and spread onto a baking tray, drizzle on some oil, and sprinkle with ground cumin and a little salt. Roast for about 30 mins on 180 and serve hot.

CuriousMama · 26/08/2012 15:37

That sounds lovely Anni37.

RemusLupinsBiggestGroupie · 26/08/2012 15:39

I use them in curries and soups or make wedges. I also have a nice recipe for an African sweet potato stew but dd2 hates it so we don't have it very often!

Jamie Oliver has a gorgeous recipe.

Onykahonie · 26/08/2012 22:36

I make these: www.rivercottage.net/recipes/hot-halloween-pumpkin-foldover/ using sweet potato and sage instead of pumpkin and thyme.

IceCubes · 26/08/2012 22:37

WinstonWolf have you made that? It looks so divine.

Another vote for Jamie Oliver's recipe which is good with just about anything! Here's an English version www.dailymail.co.uk/femail/food/article-1312958/Jamie-Olivers-30-minute-meals-Piri-Piri-chicken-rocket-salad-dressed-potatoes-quick-Portuguese-tarts.html

Root soup - sweet pot, carrot, parsnip, ginger

NoHank · 30/08/2012 11:39

I just added a couple to a beef casserole done in the slow cooker. They cooked down so much they actually ended up disintegrating into the gravy and acting like a thickener! Twas bloomin lovely though

KnockKnockPenny · 30/08/2012 12:04

Caribbean Fish Pie topping - delicious

WinstonWolf · 30/08/2012 20:55

Yes Curious, I've made it a couple of times now.

Hate to think of the calorie content Blush

TigerFeet · 30/08/2012 20:59

I cube it (around an inch cubed) and drizzle with olive oil, roast with rosemary, salt and pepper.

Or mash - my dc's adore mashed sweet potato.

Wedges with the skins on are nice.

Good in curry.

Nice with lamb in a moroccan style dish.

Makes good soup, with butternut squash.

NettOlympicSuperstar · 03/09/2012 08:51

I tried the JO sweet potato mash last night and loved it.

MothershipG · 03/09/2012 08:56

Dan Lepard's sweet potato brownies recipe - are really yummy and you'd never guess they had sweet potatoes in them!

stressedHEmum · 03/09/2012 14:05

Sweet potato quesadillas are a big favourite in here.

Peel, boil and mash about 1kg of sweet potatoes. Chop and fry an onion with some cumin, garlic, chilli flakes and oregano. Mix into sweet potatoes. Spread one half of a tortilla wrap with some of the potato mixture and sprinkle with some grated cheese. Fold over the other half of wrap and toast until golden on each side. Nice with sour cream and salsa for dipping.
