feta cheese, watercress or rocket (or any old salad really), vinaigrette.

I often marinate chopped feta in some extra virgin olive oil, fennel seeds, finely chopped red chilli, black olives and crushed garlic, then serve over a baked sweet potato. I found the recipe ages ago and have since lost it but you don't need fixed quantities and it's delicious.
