Best way to cook rainbow trout

Bought some yesterday but not sure how to cook it.

What would you suggest?

By the way, its a whole fish but want it to serve 2 people, so one fillet each.

Steamed in the oven with a little water, white wind, baleaf, pepper corns.

are they whole and gutted?
then I would just stuff them with fresh herbs (oregano, tarragon,garlic), butter,salt & pepper. wrap them in foil pour in a little dry white wine.
hot oven for about 15 min.

Thanks mummyinspain...Do you mean fish, water, wine, bay leaf and pepper all wrapped up in foil?

Any rough ideas of time and temp?

In foil, as above, for 5 or ten min at 180o ish.

Yep

Ok what I used to do was

Lay tin foil dow put greasproof paper ontop, fish ontop of that,

Wrap like a conrish pasty, you want a bit of space around the fish!

Times I am very unhelpful (aga for years)!

About 15mins in a hot oven

Will go and see if I can find my recipes.

Or you can pan fry with a little butter, mushrooms and parsely then remove fish and add cream / white wine and serve as a source.

Ok. Possibly silly question but I have trout in freezer that dp caught. Is whole but gutted can I cook from frozen or shouldn't defrost first?
