I have a pan full of stewed rhubarb - what can I do with it??

I pulled a load of rhubarb from the garden yesterday - it's now sitting stewed in a massive pan! I like eating it just on its own but I'm the only one at home who likes it - what can I do with it that's not just crumble?? Can I make biscuits???

Eat it with yogurt or just on its own I think.

Once stewed, bit late to make muffins etc I fear.

Freeze it?

1 generous cup of stewed rhubarb
2 eggs
100ml veg oil
100ml milk
1 1/2 cups self raising flour
1/4 cup of caster sugar (depending on how sweet stewed rhubarb is)

Whizz it all together, bake on 180c for around 25 minutes. Moist rhubarb muffins :)

Make ice cream with some?

Oooh - thanks everyone! Frootshoots - stupid question but do I need proper muffin cases?? I have cake cases... I'm a complete baking novice!!

Bit of a late reply, sorry! If by cake cases you mean like fairy cake sized... then that's fine, just don't add as much mixture and they'll also be cooked quicker than muffins!
