Like the yellow stuff you get in packets.

Is it some sort of spice?
I did try using a veg stock cube but it didn't do anything.

Tumeric turns rice yellow and i'd also add in some cumin as well.

Nbg · 10/03/2006 16:13

I did wonder if it was one of those two but won't it taste too spicy?

I can give you a recipe for sri lankan rice if you like? it's not too spicey and you could just put less in if you think it will be.

Nbg · 10/03/2006 16:17

Oooh yes please, that would be fab. Thank you.

3 tbsp sunflower oi
1 med onion finely chopped
2 cloves garlic
1 heaped tsp ground cumin
1 heaped tsp ground coriander
1 heaped tsp paprika
1 level tsp of tumeric
1/4 tsp of chilli pwder or cayenne pepper
10 oz basmati rice
325 ml/ 12 fluid oz of skimmed milk (i used semi skimmed when i made this and added water as it cooked
1 tsp salt
8 oz mange tout
4 oz mushrooms
small tin of sweetcorn
2oz sultanas (i didn't add these as I don't like them)
basically you can add any veg you want.

Fry the onion and garlic for 4-5 mins
then add the spices.
add the washed rice and stir for about 2 mins
add the milk, salt and pepper bring to the boil cover until liquid is absorbed (if you've used semi skimmed milk add some boiling water as well)
while rice is cooking steam or cook the other veg and fold into rice.

How much will it make?
Is it for 4?

OP posts:
edodgy · 10/03/2006 16:29

yeah it fed four of us the other day you may want to add a little more onion and spices as I had to double up the rice and milk ( I only had recipe for side dish) Taste it as you go and you can always add more spices in as you go along. It turned out quite mild for us which suited my nearly 3 year old dd.

Nbg · 10/03/2006 16:30

Dd will love it, no doubt.
