Quick! What can I do with waxy potatoes to go with roast pork?

That's it really.

We're eating in two hours and all I have are medium sized, VERY waxy potatoes. We're having roast pork.

Had a potato bake last night so other ideas would be welcome!

Scrub them, roast them whole if small or cut in half if slighlty larger, in a tin with crushed garlic, rosemary if you have any, pepper and shallots/onion wedges, they will be great...

I'd use them as a trivet for the pork - sliced about 1 cm thick - and then remove them and crisp them up about 20 minutes before the end.

These ones always come up very weird if roasted newmumhannah. Not sure what it is about them - and they are the only ones available here - but they just taste wrong roasted.

Conflugen that sounds delicious!

I ended up doing these and it was lovely.

Thank you both!
