Do you make your own chicken nuggets?

I used to make fab ones, just sliced chicken in breadcrumbs and baked in the oven.

However, Little Miss Fussypants now decides that on certain days, she will not eat them. But I do not know which days these are until I have cooked them. Hence lots of uneaten expensive organic chicken grrrrrr.

How can I make my chicken go further? Do I mince it and mix it with something else (what?).

Of just give up.

I make lots of them and freeze them uncooked. Then defrost and put in oven to cook.

Don't think I can then refreeze them. Or can I?

if they have been frozen raw, then cooked, they CAN be re frozen.

You cant refreeze if they were cooked, frozen, defrosted, cooked. IFSWIM?!
