What veggie dish shall I make for the freezer with the contents of my fridge?

I fancy making something vegetarian for the freezer.
I've got 5 red peppers, a large punnet of mushrooms, various other veg, low fat feta, parmesan, cheddar and mozzarella. Also a fairly well stocked cupboard.
Would low fat feta work in a lasagne? Would I need to make a bechamel? My lasagnas always turn out dry and too tomatoey and the white sauce seems to disappear.
Or can you help me find something else please?

Can you freeze stuffed peppers? What do you stuff them with - rice or couscous?

I use cheese and veg, bit like a lasagne filling but lots more cheese. I'd put mozzarella in the filling and Parmesan on top. I've never frozen them but I have made them and reheated in the oven, which worked well.

Soften peppers in oven, stuff with your filling, top with cheese, bake in oven for 15 mins.

A roasted veg pizza?

A red pepper sauce that could go with anything?

Not sure if this matters to you or not, but parmesan isn't usually vegetarian.

have you got tins of beans (kidney or canellini)?
if so I'd make a big vat of veggie chilli, which freezes well
can serve with jacket spuds or use as a filling for burritos.

All good ideas, thanks. I didn't really fancy all the work that goes into a lasagne. I'm veering towards the stuffed peppers, but I want to make a risottoey type filling and don't know if it would just turn to mush in the freezer.

Poppy283 - I'm not actually vegetarian, I just like veggie food. Smile
