Urgent! Muffins or cake without butter?!

I'm supposed to be making cakes and a tomato tart for 11am tomorrow. But I have 4oz butter in the house. It's enough to make some pastry but does anyone have an easy recipe for little cakes or muffins that don't need butter. I have oil hence me thinking muffins but frankly so long as its nice and uses store cupboard basics I'm in. Help!!!!

I often sub canola (rapeseed in UK?) for butter (measure for measure) in muffin recipes and they turn out great. In fact, most North American recipes use oil instead of butter anyway. Try epicurious.com ("muffins").

My basic muffin recipe is this :

Muffin Recipe

275g (10oz) plain flour
2 level tsp Baking Powder
75g (3oz) caster sugar (omit if going savoury!)
2 medium size eggs
225ml (8floz) milk
110g (4oz) butter, melted

Put all dry ingreds into a bowl.

Mix all wet together in a jug.

Combine the two, but don't over mix, it might even be a bit lumpy, but don't worry!

This makes 12 muffins.

You can sub veg oil for the melted butter. And obv add in or swap flavouring/choc chips/jam/nuts whatever you fancy

Have you got dried fruit? Irish tea bread; Soak 500g in 300ml of cold tea overnight (maybe add 200g of brown sugar to this). First thing tomorrow, stir in 1 egg and 275g sr flour. Put in a large loaf tin and bake (180c) for 60 to 90 mins.

I use oil in muffins not butter I think they're better made that way.

Yes, I use veg oil in my muffins, makes for a lighter texture than butter

mary berry does nice muffins with yogurt and milk instead of butter or marg.

Jam doughnut muffins

10oz plain flour
1tbsp baking powder
4z caster or soft brown sugar
2 eggs
9fl oz milk
6tbsp sunflower oil
vanilla extract
Strawberry or raspberry jam

Preheat the oven to 200C/400F/Gas mark 6/Fan oven 180C

Sift together all of the dry ingredients, beat the eggs lightly then add the milk and oil. Make a well in the centre of the dry ingredients and add the liquid combine all the ingredients together but do not over mix.

Spoon a dessert spoonful of mix into the muffin case, add a dollop of jam then top with another spoonful of mix bake in the oven for about 20 minutes.

Omg these sound gorgeous! Thankyou Grin did I mention I have no milk crap mother so I'll go down the subbing route I think. I've also just made a jelly just in case! Any more ideas?
