Hugh f-w's 'meat book' lentil salad - can anyone help with the recipe?

My meat book is packed away and I can't find it online.

It's puy lentils and a cider(?) vinaigrette?

Hope this is what you're after;

Lentils for cotechino, tongue etc;

250g of puy lentils

2 tblspoons extra virgin olive oil

1 garlic clove finely chopped

1 small onion finely chopped

1 celery stick finely chopped

Salt and freshly ground pepper

Rinse lentils put them in a pan of 1 litre of cold water bring to boil then simmer for 15 mins

Heat oil in pan sweat garlic onion amd celery. Add lentils and a splash of water. Season with salt and pepper.

Cook for 5-10 mins

Add water as necessary. Check seasoning add trickle of olive oil.

Cool the lentils

It suggests serving alternatively hot or cold- cold being with a salsa verde over tongue!

That's basically parsley tarragon lemon juice or vinegar. Olive oil. Anchovy filletss (4-5) capers, dijon mustard and salt and pepper!
