Embarrassed of my cooking, and request for advice

In the past 6 weeks I have had my food rejected thrice (not in a rude way though). Twice the same person had to cancel as I was actually cooking the meal (felt ill) and another time some friends were calling in on us on their way back from holiday. I went to a lot of trouble to prepare a meal but when I was about to serve up they said they weren't going to stay for dinner as they wanted to get on (even though they had said they would have dinner).

This evening a different friend is coming round en route to somewhere. I don't know what to cook for him. I don't want to have to chuck unwanted food, nor do I want to have nothing to offer if he does want to eat.

What would you suggest?

I would make a casserole or some sort which you can then freeze if not used

even better if you have a slow cooker as this gives you more flexibility as to when you serve it/

I would suggest not taking it personally. People are buggers

Then i would suggest making easily freezable meals like lasagna so that there is little cost to you

Thanks for your responses! In the end I just opted to do a basic ham salad, and it was graciously received!
