Summery rhubarb recipes anyone?

A neighbour has just given me 2kg of rhubarb Grin. I'd usually turn it into rhubarb crumble, but it's not really the weather for that atm. Anyone got any summery recipes for rhubarb that goes beyond stewed rhubarb and ice cream (as that's all I can think of!). Three-year-old friendly would be a help, but not essential.

NOT 3yo friendly, but ... Hugh F-W has a rhubarb bellini recipe - make sure you can get to the bottom of the glasses come washing up time though!

You could always stew and freeze it for when it's rhubarb crumble again.

Rhubarb sorbet.

Stew it, purée it. 700g purée to 300g sugar. Stick it in ice cream maker. ET VOILA!

Would be nice served with oaty biscuits for a crumble sort of taste?

Rhubarb & strawberry compote?
Stew the rhubarb then chuck in about the same weight of strawberries for about 2 mins at the end. Great for breakfast.

I know you said no crumble and no ice cream, but have you tried Delia's rhubarb crumble ice cream? It's one of my favourite ice cream recipes.

Rhubarb freezes quite well. Chop into chunks and scatter a bit of sugar over it. Store in placcie bag.

Fantastic recipe for rhubarb and custard tart in hfw's veg book, I served it cold, by this I mean I put it in the fridge and managed to eat the entire thing in a day-it was amazingGrin
