Can I use a normal sponge mixture to make fairy cakes?

I was going to use this recipe: www.bbcgoodfood.com/recipes/1997/classic-victoria-sandwich?pager.offset=200

But I thought I read somewhere that you should use less/more flour when making fairy cakes?

Also, can I just add a bit of vanilla essence to the sponge mixture and top with whipped choc ganache? In my head they'll be yummy, but I want some confirmation!

I use exactly the same mix for fairy cakes and bug sponges, but only cook fc for ten mins.
