What veg in a chicken and chorizo casserole

I haven't got a recipe so am winging it but can't decide what veg.

So far I'm thinking

Chicken pieces
Chorizo
Tin of tomatoes
Stock
Some beans of some sort

But then what. Leek? Definitely some onion I would have thought. Celery? I would normally add carrots but it doesn't feel right.

Any suggestions?

I put red peppers in today and onion plus tin of butterbeans. Yum.

I go mediteranean with mine, so red onions, peppers, mushrooms, maybe some red peppers. I also put new potatoes in, cut in half. Luvverly, one of my fave quick family meals.

Peppers, cougettes and onion. I'm thinking Mediterranean flavours or like Delia's Basque chicken and rice dish with olives and sundried toms.

That's nearly Spanish stew- glass of white wine (sorry, not a vegetable)
Carrots fine, not too much ,celery,onion, potato, peppers, mushrooms .
If you put potato in, needs to cook for a good, long, time or cook small cubes separately before adding.
Saffron (is that a vegetable ?)
Crusty bread ( definitely not a vegetable)
Enjoy,wish I was eating that.

That all sounds good.

I think I'll try red peppers, onion, mushrooms, maybe some wine and saffron.

And the potatoes could work... I always do long slow stews so they would cook ok.

I do have some courgettes, but if I cook them too long won't they turn to mush?

And then I could add some olives near the end.

Thank you all. Will get shopping then cooking.

Will be delicious.
Add courgettes near the end and they'll be fine.
Eat the olives while cooking.. and drinking a spot more of the wine.

I do it with chickpeas and add a bag of prewashed baby spinach at the end.

Handful of black olives - about half an hour before the end so that they can get all plump in the juice.
