Ingredients:
100g bar of milk chocolate (i used tescos own)
250g self raising flour (or plain flour with 2tsp of baking powder)
150g soft brown sugar
2 ripe bananas
2 tsp cinnamon powder
1 large egg
2oz butter

For the cream:

300ml Double cream
1tsp vanilla flavouring
1tbs caster sugar

Method:

Combine the flour, cinnamon and butter in a mixing bowl and rub together until it resembles breadcrumbs.

Next put the chocolate into a bag and vent out your frustrations with a rolling pin until it's well and truly smashed into tiny pieces. Mash the bananas (tip: they mash better after a few seconds in the microwave) and add the chocolate, mashed bananas and brown sugar to the flour mixture and combine with one large egg and mix until it forms a sticky dough. You can always add a little more flour if it's too runny or a touch of water or a little more egg if it's too stiff.

Grease or line a loaf tin and spoon in the mixture and sprinkle over with brown sugar and cook for 40 to 45 mins on 150c. Cooking times may vary depending on the oven so after 30 minutes, keep checking at 10 minute intervals.

Cream:

While this is cooking, pour 300ml of double cream into a bowl and whisk in a teaspoon of vanilla extract and 1tbs of caster sugar. Whisk and combine until thick. Yummy cream for your cake.

It is a twist on a river cottage recipe from this week's 3 Go Mad so if you want to see how they made it, take a look on 4od. They used ground cardamon instead of cinnamon but I changed it and made it my own. It's amazing. I definitely did the right thing by substituting the cardamon for cinnamon. As for the cream, that was my own idea.
