Has anyone got a really good, works-every-time recipe for gluten free carrot cake?

Just that really!

I'd really like to make one for a friend who's gluten-free. What's the best recipe you've ever used?

(I'm also open to suggestions of your other best-ever gluten-free cakes even if they're not carrot. I'm not fussy!) Smile

do you have a favourite recipe already ? I make a crushed pineapple and carrot cake, just substituting Doves Farm GF self raising flour into the recipe

does that work then? I'm always cautious about a straight substitution because I thought that GF flour absorbed liquid to a different degree and therefore you needed more / less (can't remember which) than with conventional flour.

I use this recipe with regular flour, the cake is lovely and I highly recommend the recipe. One of the people commenting (16 Dec 2007) said she used gluten free flour as a substitute and it worked fine.

Generally add a bit more liquid to gluten free cakes/ I just bung in a splash of milk. Hale and hearty do a nice choc cake packet mix if you want something safe and easy.

You will also need some xanthum gum to hold the cake together. Make sure your baking powder/soda is gluten free too. :)

Sorry no good recipies - I can tolerate a little gluten and my allowance is used on cake...

It always seems to work, but I always adjust my consistency with milk/juice anyway. But having made 100 cupcakes this weekend, half gf half not, it seemed to be the same

Hi! I have a fantastic recipe which I am hoping to publish in a book of 'free from' recipes for babies and children with food intolerances and allergies. It is for carrot cake cupcakes and they are extremely moist!

Freefrom Fairy cute carrot cupcakes

175g soft brown sugar
175ml vegetable oil
3 large eggs (or egg substitute if egg free)
150g Doves Farm gluten free plain flour
1tsp bicarbonate of soda
1tsp baking powder
1tsp ground cinnamon
1/2 tsp freshly grated nutmeg
225g grated carrot

Icing - zest of 1 unwaxed orange mixed with 125g icing sugar and 15ml orange juice. Alternatively, if you can tolerate dairy use 225g full fat cream cheese, 2tsp honey (or to taste) and the grated zest of 1 unwaxed lemon.

Mix sugar and oil in large bowl. Add eggs and mix well. Add dry ingredients and beat until well combined. Add grated carrots and stir well. Place cake mix in 12 muffin cases in a muffin tray. Bake in a 180 degree oven for 15-20 mins.

I am on here to do some research about the market for 'freefrom' foods for babies and children. I am developing a range of food for this market and would like to know what people would like to see within it. I am going to start a new thread but if you have any comments I would love to hear from you!
