I'm struggling with finding full recipes for gateau (not cake) ie eggs and cream with touch of flour to make thin layers of light sponge between mousse.
I have come across a couple but they are very vague. I want to add a nice liquor. On the Patisserie Valerie they use a Sabayon cream (doesnt state what alcohol they use) - I can find this by google but would rather a tried and tested recipe.
Anyone have recipe/book recommendation?
I want to make this gateau and cover with a chocolate collar which is covered with a chocolate transfer sheet.
