Lots of cakes needed- what can I freeze in advance?

I have quite a lot of people coming for tea and cake after a Christening next week. I'm not the worlds best baker but want to make a selection of cakes.

I can do some the day before but I also have kids in the house, need to keep it tidy etc.

Does anyone have any suggestions of things I can make in advance and freeze? Or keep in a tin?

I was thinking rock cakes freeze don't they? I can make millionaires shortbread - that takes a while to make so I want to do that in advance... then in a tin?

Other things I was thinking about -lemon drizzle, chocolate cake - best the day before? Can I ice the day before too?

Thanks - all help welcomed!

You could make and freeze 8" chocolate, lemon and vanilla cakes then defrost and top/fill decorate the day before. You could use cherry and cream filling for the chocolate, lemon drizzle and plain old strawberry and cream for the vanilla.

Ooh I can? I didn't think cake froze well for some reason (I really am a novice). That might be a good idea then... need to get myself in gear this afternoon.

sponges definitely freeze well, but ice/fill when they come out

If they're needed Sunday morning, when do I take them out of the freezer to defrost? Do I wait for them to finish defrosting before icing?

(I'm ok at following a recipe but really don't know anything beyond that!)

Carrot cake was the other one I wanted to make... does that one freeze?

BeatriceBean ,Most cakes freeze well, its the fillings on some cakes that may cause a problem, saying that i froze buttercream the other day, defrosted it and it was exactly the same.I've had a day of cooking myself today, made vanilla cheesecake, marsbars krispie squares and 24 individual bakewell tarts plus two 6inch tarts, i will regret this at some point when i cant button my work trousers up tomorrow, ha ha.
