Help me make dinner with the suff festering in my fridge

Going on holiday tomorrow so don't want to buy anything in for tonight, I have:

Pork loin
Spinach
Ricotta
Eggs
Coriander
Mint
Corn on the Cobb
Limes
Bay leaves
Cheese

Usual store cupboard stuff - would really like to use up at least the pork!

Ideas?

If you have bread crumbs , do herb crusted loin of pork serve with corn on cob, and wilted buttered spinach and pots if you have any?

Not confident but... could you cut the pork in to bite size pieces and pan fry it. Then take it out of pan and make a sort of instant cheese and spinich sauce with milk, grated cheese and ricotta. Serve with corn on cob.

I have panko so could do the herb encrusted pork loin, like the sea of cheesy sauce with spinach then yup obvs corn in the Cobb - that was easy enough!

Good recipe for the pork? I never get it right....

Prob too late but I would dip in egg wash and coat in pre seasoned panko with mixed herbs etc fry in hot pan till golden and Finnish on oven. Mmmmm.
