Here's my mum's "Moroccan chicken":
Brown chicken pieces (thigh best) in olive oil & butter - remove to plate
Fry chopped onion slowly in same pan
Add back chicken
Pour in stock (I use stock cube & water) to mostly cover chicken
Add: Lots of paprika, lots of ground cumin, bit of cayenne, stick of cinnamon and crushed black peppercrons
Bring to boil, then simmer till chicken begins to come away from the bone
Add tinned chickpeas and simmer a few more minutes
Add chopped coriander and lemon juice
Serve (is good with cous cous and roast veg)
