Pork loin steaks, inspire me!

Was hoping to have them for dinner tonight, but I bought them without any particular meal in mind Hmm

Low fat recipes preferable (I do WW), have most things in/stocked store cupboard etc so if anyone has any ideas..? Thanks! :)

I chop them up and casserole them with red peppers, onions, tomatoes, olives and red wine.

Brown the cubed pork and then the onions, add pork back to pan and add a tbsp flour, cook for a minute and add a tin of chopped toms & the wine (about a large glass, depends how much of everything else you have, could use stock instead or even just water). Add chopped peppers and a handful of green olives. Bring to boil.

Cover and transfer to over at gas mk 1 for a couple of hours.

This is pretty much an old Delia recipe called Spanish Pork & Olive. The flavours combine really nicely and the wine gives a gorgeous rich sauce.

That should be pork & olives although I guess if you don't really like olives you could just add the one Grin

I used to make a sort of pork stroganoff which was nice - we haven't had it for ages actually might need to give it another go.

It was basically onions and mushrooms then add in the pork loin cut into strips. Then you added cream I think and maybe stock or something and some paprika.

It could be served with noodles or rice or potato's.

We usually have with stuffing, pots, gravy and bubble and squeak.

Topped with ham or bacon and cheese dine in the oven with crushed boiled patties tossed in basil, garlic and butter, or new potatoes and leeks in a creamy cheese sauce. Or cut and stir fried is obviously healthier. Slow cooked in about a pint of dry cider (easy cheat meal this) with a bit of garlic and thickened at the last minute with oxo best pork granules. It's beautiful served with mash with mashed veg (cauli, carrots, sweet potatoes, turnip with hirseradish) mixed into the plain mash.
