50g caster sugar
1 small glass of champagne/sparkling white wine
2 large conference pears
4 large red plums
2 cox's apples
handful blackberries/fresh cranberries
25g icing sugar
2 tbsps eau de vie/brandy/whisky
dissolve caster sugar in 100mls of water then boil for 3 mins, remove from heat and add champagne, pour into large bowl and set aside
peel and core pears, then slice or chop,halve the plums then stone and slice, core and slice apples
toss fruits in icing sugar
heat large non-stick frying pan until really hot add fruit and stir fry for 1 min, add EDV and cook for a couple of minutes until evaporated
Add the hot fruits to the champagne syrup, leave to cool and chill lightly
