I make a lot of vegetable curries - I like them, the rest of the family eat them ?

One of my favourites is ratatouille. I plan to make that later today. Only me and DH will ea that though as fussy DC have an aversion to 1/2 of the main ingredients.

I made some cracking veggie burgers last week - I loosely followed a recipe from a book. They exceeded my expectations. Basically smushed up kidney beans, breadcrumbs, grated carrot and courgette, fried onion,celery and garlic, chopped herbs - can't remember which, and an egg to bind. I then used a cookie cutter as a guide to make them a nice uniform shape and baked in the oven.

I made this yesterday - like a cross between cauliflower cheese and mashed potato. Though leave out the garlic (raw garlic is not a good taste in a hot food) and butter.

Broad bean and chilli mash is another one I like (but no one else here will eat). Essentially cook and double pod some broad beans (you can use frozen). Then blitz up with fresh red chilli and black pepper. Sometimes I do 50/50 broad beans and peas.

Mushrooms, red onion wedges and tomatoes (cherry for preference) roasted in the oven with balsamic vinegar and rosemary.
