Potato salad - how far in advance can I make it?

I'd really like to make it this morning, but it's for lunch tomorrow. If the potatoes are well covered in mayonnaise etc will they be ok?
Any advice gratefully received.

Yup, that'd be just fine!

Yep - especially if you put any spring onion or chives in - gives the flavour a chance to build....

Thanks for such a quick reply Smile

Was just worried about the potatoes going grey - you're confident they won't?

Yes that's fine - I usually make it the day before :)

also agree fine a day ahead. You might need to a a bit more mayo if the potatoes have absorbed some of the oil, just to loosen it, but the potatoes will be fine.
