Beet root salad- can anyone talk me through from picking to eating?

I have about 20 beetroots which look ready to pick. Haven't grown them before tho. So what do I need to do from picking to table for a tasty beetroot salad?

I do a roasted beetroot salad.

You need:
Beetroot
Sunflower seeds
Maple Syrup
Balsamic Vinegar
Olive Oil

You scrub your beetroot, put on an oven tray, chuck some sea salt flakes or similar on top and sprinkle with olive oil.

Cook at 200 degrees for around 1.5 hrs. It depends on how big they are. Just stick a knife in to test if they are soft.

Let them cool a while, then peel. Cut into chunks.

Roast the sunflower seeds in a pan.

Make a dressing of one part olive oil, one part maple syryp, one balsamico. Season with salt and pepper.

Mix the seeds, beetroot and dressing.

It makes a nice main meal if you serve it on a bed of green salad, especially spinach is great. I also like to decorate it with some mozarella and cherry tomatoes.

Peel and grate them and mix with grated carrot, chopped apple and chopped oranges and a simple vinagrette.

May sound odd but it is delicious!

Ooh I love fresh beetroot, used to grow loads of them on our allotment :) I simmer them whole in a pan of water until cooked all the way through, no need to peel them just chop off the leaves first and wash before boiling. Drain the water away and add cold water to the pan so that they cool. Once cool enough to handle using your fingers peel away the outer skin and stalks. Slice the beetroot into slices and layer into a glass dish. Sprinkle salt between the layers of beetroot. Cover with clingfilm and leave in the fridge to go cold. Much tastier than pickled beetroot out of a jar :)
