I've got some bacon and I don't know what to do with!

I just wondered if any of you clever people had some inspiration for a quick even meal that uses bacon? I bought some nice stuff in the farm shop in Sunday and I really fancied it tonight. We were going to have it with blue cheese and walnut pesto but as DH ate his own body weight in blue cheese yesterday he turned slightly green this morning when I told him what was for tea.

Anyway the meal does not have to be child-friendly as DD will have eaten in Nursery but I would like it to be quick as I have an exciting evening of meal planning and internet grocery shopping ahead of me. Oh my crazy life.....

Bacon and mushroom omelette. Chicken and bacon BBQ pizza. Some sort of creamy pasta with bacon. Avocado and bacon in a salad with a lemon juice dressing (my fav!) Or bacon sandwiches

Creme fraiche, pesto mixed together, cook some onion and mushroom and bacon and mix the whole lot with some penne....yum.

Wrap the slices around asparagus spears, drizzle with olive oil and bake for 20 mins. Serve with chunks of fresh bread.

Fry with chopped onion and many apples.

That's it. You can bulk it out with pasta, if you want. But bacon+apple=amazing.

Oooh wrapped asparagus is good....ditch the bread and serve with a lovely poached egg to dip them in....

Or - bacon pasta. Fry onions, chilli, garlic, chopped bacon. Add chopped tomatoes, tomato puree, red wine. Mix with pasta when cooked down a bit. Put parmesan on top.

Or bake some potatoes, cut into halves, scoop out insides and mix with cheese and cooked chopped bacon, then put back into potatoes and grill.

This sounds disgusting but my children LOVE this with these.

or you could make ham and egg pasta (kind of cheap and easy carbonara).

Thank you all for the wonderful ideas! I agree all the pasta dishes would have been great but I have eaten pasta for the last few nights and just wasn't in the mood. Instead I went with Ms W and baked 2 potatoes, chopped the bacon and fried it up and mixed it with chopped celery, spring onions, peas, sweetcorn cheese. I scooped out the inside of the potatoes and mixed it all together, put it back in the skins with cheese on top and put the under the grill.

It was totally delicious. I have done it before with tinned tuna or corned beef but had never thought of using bacon. Also the bacon from the butcher is sooo much better than the supermarket stuff. It was so thick and chunky and tasty.
