Open it up, place a sliced of smoked ham, some defrosted, squeezed-out spinach and some grated parmesan inside, season with pepper and nutmeg, close up and fasten with a cocktail stick. Poach gently in a little white wine or stock.

parma ham wrapped around a piece of emmenthal / gruyere. Roll whole thing in clingfilm and chill, and then flour/egg/breadcrumb and breifly deep fry before finishing in the oven.

So - to report back. I stuffer it with a quater ball of mozarella (chopped) and a couple of halved cherrt toms. Then wrapped in a couple of slices of parma ham. Baked at 200 for 30 mins. He picked out the basil leaved I'd put in to make it pretty! He ate the lot though!

Now.. I have gone mad and bought a pork steaky-looking thing. Any suggestions?
