If I make a cake and cupcakes tonight will it still be ok for Saturday?

Just a sponge recipe, bake them tonight and then buttercream the cake and pipe frosting on the cupcakes in the morning. Will it be ok for lunchtime Saturday?

The second option is bake tomorrow morning and then ice and decorate tomorrow night when I get home from work at 10pm but I've got lots to do then.

I just made 48 cupcakes for Saturday. Store in an airtight box in a cool place. Personally once I add buttercream icing, I store in the fridge.

I have worked in catering, Store them correctly and the 3 days before discard rule means that they will be fine for Saturday lunchtime.

Ok thanks, perhaps I should do the buttercream a bit later then... Have limited fridge space.

I would only bake cupcakes either last thing the night before I needed them or the morning I needed them, I'm afraid and the same applies to all the professional cake makers I know. Most cupcakes shops only bake on the same day as sale too.

You could freeze them and then take them out early Saturday morning. Let defrost and then frost them. They don't take that long to defrost. You can also frost whilst still frozen, although I've never done this.

A large cake will last for longer if you wrap it well and store in an airtight container, or if you're covering in fondant, that'll keep it fresh. Larger sponges havea shelf life of around 7 days.

You can make cake and freeze, take out the night before and store in airtight container, add cream/ frosting on the day

Recently made 80 muffins and cupcakes for a party about 2 weeks before over 2 days when I had time, added all to freezer and then ment day of party was only a 15 min job to ice cupcakes ( only took out around 7am from freezer and room temp when iced at 9am)

Well I'll be making them tomorrow now as I fell asleep, had a shower, browsed the net and then realised oh cack I didn't made the birthday cake....

Well at least they will be mega fresh Grin
