My left over roast rib of beef

It's huge and cost a small fortune. Have lots left over so thought I'd make a casserole with it maybe? What do you reckon?

Do I just shove the whole rib joint in a casserole dish and with what?

I wouldn't do a casserole. I'd do something like stir fry or faijitas or curry or shepherds pie

The reason that I wouldn't do a casserole is because the meat is already cooked and wouldn't need a couple of hours in teh oven but teh other ingredients in a casserole would esp if you used beer or wine in it

fry up onions garlic mushrooms, possibly pepper, add a big dollop of curry paste ( madres or rogan josh) and a can of tomatoes, then add the copped op beef.

or soe other similar concotion

Oh, you wouldn't chuck in the whole bone thing then?
My friend made a curry with her left over leg of lamb and chucked the whole thing in and then pulled out the bone once it was cooked. Thought I'd do something similar with the rib of beef. Is it better for me to remove all the meat from the bones first then? Just wanted this to be a bung it all in one pan type of dinner.

Personally I prefer to take the meat off the bone and chop it up so that the curry flavour can penetrate through the meat better - have tried whole leg of lamb curry and was disappointed, esp as it took 24 hrs to prepare.

However it's all a matter of personal taste
