lamb boneless neck fillets - how to cook them?

I bought some lamb boneless neck fillets today from the meat counter at the supermarket, as the butcher there recommended them. Not being much of a meat eater myself, I dont really know how to cook them. I was just planning on doing a bit of a lamb casserole I suppose (for my DS and baby DD). Should I juts chop it into pieces and do as I would if it were chicken etc?

Any help gratefully received.

mckenzie, I've copied/pasted the recipe below, it was posted by a Mumsnetter (in 2001!), lots of us tried it (ourselves and ds's/dd's) and loved it! :

Lamb and Carrot Casserole

"buy neck fillet, chop, dust over some flour. Fry til brown with chopped onion and mushroom. Add small tin of tomatoes, a chopped carrot or two. Pop in your casserole pot, fill up with vegetable stock and put in the oven for as long as poss. 2-3 hrs at about 140. Low and slow"
