I need your absolute best & idiot proof scone recipe & teeny tiny sandwich filling ideas !

for street party.

want light fluffy but big scones and lots of teeny tiny sandwiches, for a fancy shmancy afternoon tea

your recipes and sandwich ideas will be v gratefully received!

I bake for coffee mornings and usually x4 the recipe....then it makes around 60 scones.

Plain scones.
8oz self raising flour
1/4 teaspoon baking powder
2 teasponn sugar
2 oz butter (always butter, far nicer)
1 egg
milk

I usually measure out all dry ingredients and butter and rub together until fine crumbs, add beaten egg with a splash of milk then with a fork mix into a dough, add more milk (sorry alwys use my eye) until the mixture is stretchy airbubbly dough. Gently tip out (I usually make it a little sticky) onto a floured surface and quickly shape then press out (not roll) about an inch thick, try not to handle the dough too much. Shape and bake in a hot oven, about 170 in my gas oven, usually only takes about 10 mins and they're still cooking after you take them out.

wow ! that's a lot of scones.... thank you , will try that.. I think in the past I have overcooked them, so thanks for the reminder about them still cooking !

Pinwheel sarnis? They're a faff but look lovely. How to here - although there's aren't very pretty looking! I do contrasting colour bread and filling - so brown bread with philly & chives, white bread with tuna mayo or Nigella's butter/marmite filling

what a great idea ! I remember doing the butter/marmite thing for one of the DCs partys years ago.. it's fab !
