could I put peas and sweetcorn in an omelette?

I am trying to get dd, 17 months, to eat more veg. She loves fruit but is quite suspicious of veg. She absolutely adores omelettes though - could I put peas and sweetcorn in one do you think?

Yeah chuck em in, but I think if you want to sneak veggies in it's better to do it in puree form like in pasta sauce or a smoothy for example.

You can put whatever you like in an omelette...but don't be surprised when your daughter (a) notices immediately what you are up to, and (b) spits out the veg or (c) refuses to eat the tainted omelette either

thanks - I will try it and see how it goes.

I already make pasta sauces with lots of hidden veg.

Any other ideas for hiding veg? She won't touch potato so I can't hide things in mash.

Um not really hiding, but sweetcorn fritters are yummy! just as they sound... sweetcorn in a pancakey type batter. Very nice, we had them with pulled pork & coleslaw last night.

We like making Rainbow Rice... it's just cooked brown rice, stir-fried with some finely chopped spring onions and various veggies diced small, including peas and sweetcorn. Flavoured with a little soy sauce, it's colourful and tasty

Carrot muffins can carry a heck of a lot of carrot and a bit of courgette, grated.

I want to try spinach cakes that a tapas bar does - ds has a real texture thing with fruit and veg. He eats smoothies and veg chips and smooth soup now at least.
