make lamb burgers with the mince, an onion, a little cumin and some garlic and stuff into pitta pockets with salad and a yoghurt and mint dressing.

I like the idea of the pitta pockets I wouldn't have thought of that! And will make the minty yog dressing. Last time I made lamb burgers there was no mint in the supermarket, is mint seasonal?

Make a lamb version of yuk sung sp??? Ridiculously quick !

Fry it without oil until dry
add v finely chopped onion, fine sliced celery stick, garlic, ginger, splash soy, smaller splash lime juice, cook for just couple more minutes then
serve in large bowl and let DC spoon on to whole iceberg lettuce leaves, roll and eat with fingers - outdoors maybe?

Mmmmm thanks for all the ideas! I'm doing the burgers with the mint dressing today but I got 3 packs of lamb mince from the supermarket in the reduced section to try the other recipies :)

I don't know what this is called but it's what I like to do with lamb mince when the weather's hot:

Cook the mince with onions and tomatoes and plenty of rosemary and garlic. When it's nearly done, stir in some olives and feta (if you get one of those little tubs of cubed-feta-and-olives that works nicely) and serve with rice.
