Did anyone see Phil Vickery cooking pork chops on This Morning today?

He soaked the chops in brine ( water, salt and sugar) for 15 mins before cooking - oh good Lord WHAT a difference it makes (he said it would! Grin)

Just had them for tea and they were delicious! :)

Interesting! I brine my chickens before roasting (makes a HUGE difference!) so I am eager to try this! We just had pork chops tonight though (chicken-fried pork chops in honey garlic sauce), so will have to wait a few days.

Don't brine chops but have brined the tenderloin on occaisions - as Phil said that cut doesn't always have the flavour. Brine it, then dry off, roast in pan to colour a bit, paint with hoisin sauce and finish off in oven. Make a quick sauce and 'tis fab Grin.

Modern pork is reared too lean - Old Spot and breeds like that don't need this as much - having fat in meat is a good thing - pity many consumers don't see it tthat way.

I use this recipe for southern fried chicken, which is brined.
It's one of our favourites.
I've not tried brining anything else yet though.

Sorry - it was LOIN - we call everything 'chops' Blush

I brushed over maple syrup and olive oil right at the end to caramelise,mmmmmmmm! :)

black do you soak them in a bucket? What salt and sugar quantities do you use?

No sugar, 60g salt per litre of water, I usually use 3 litres. Soak overnight (as close to 24 as I can).
