Too Much Smoked SAlmon .... Recipes please

I have just defrosted the freezer and have a side of smoked salmon that I need to do something with ( preferably for Christmas )
Do any of you have ideas .... pate or somehting ??
I need inspiration

Mousse, quiches? Erm if you've defrosted the salmon already won't it be a bit manky by Christmas?

How about in a pasta sauce with creme fraiche and dill?

"Too Much Smoked Salmon" - no such thing in my opinion !

You're probably going to have to eat it as you I don't think you'll be able to refreeze anything you make with it as the salmon has already been frozen once. Invite some friends over for lunch and have smoked salmon with a squeeze of lemon and brown bread + butter. Mmmmm am making myself hungry !!

what a terrible dilemma!

If you have any left after the mousse/nibbles then you can fry it up like bacon and have it in sarnies. (sacrelidge to some, I know)

However dp says that smoked salmon is routinely defrosted and re-frozen several times on its route to the shops (he used to work in a fish preparation factory), so he doesn't see why you shouldn't re-freeze a bit of it.
