Can you freeze roasted vegetables?

If so how's best to go about it? And what can you do with them later? I presume the consistency changes slightly to fresh roasted veg? Thank you so much! :)

Yep. I quite often freeze roast potatoes and then just fling them in the oven from frozen for 15 minutes or so.

If it's roasted peppers/courgettes etc etc, then they freeze fine, but are better suited to a veg lasagne or ratatouille sort of dish.

frozen roasted root veg survive really well, think potatoes, parsnips, carrots - 30 mins in a med-hot oven

roasted then frozen squash isn't so good, but perfectly edible

any other 'sturdy' veg i'd make into a lasagne and freeze that

Thanks Frank, it is pepper/ courgette/ aubergine/ red onion. I thought perhaps I could put them into a tomato sauce for a pasta dish?

I cool my roasted veg and portion into chinese food boxes, then I either use them as a topping over baked potato, in a sause or blitz for a soup.. I waste nothing lol

Either/or Lola is fine. I tend to freeze them as is in portions and then take out and use in various ways, rather than just limit myself to one thing iykwim.

Thanks Frank!!! Am quite excited am trying Falafels for the first time tonight with roasted veg and halloumi. Shocking I haven't tried them before now considering I'm a veggie! I just didn't want to waste the left over veg! :)

I do all the time.

I roast courgettes , mixed peppers and aubergine and then cool them , portion up and freeze them in foil cartons.

I then use them in the following ways :

Put on a shop bought cheese and tomato pizza to jazz it up a bit

Mix with basil and tomato pasta sauce and use for a veggie lasagne or pasta bake

Serve with Cous Cous and grilled meat or fish.
