raw beetroot and pak choi

what should i do with them?

dont know about beetroot but pak choi good for stir fry i think?

juice the beetroot with some carrot and apple

and wash the bok choi well, slice each stalk in to three horizontally and stir fry in sesame or normal but not olive oil for 2 minutesl, throw in some chopped garlic and fry for a further 1 minute, then put in a tablespoon of oyster sauce, 100ml of water and a teaspoon of sugar, put a lid on the pan and simmer for 2 minutes

i just saw anthony worral thompson do something with pak choi last night .. very similar to suzywong's, but think he used some soya sauce too and drizzled with some honey, not sugar at the end. Don't overcook, he said, should still be slightly crunchy.

pak choi is great with ginger, garlic and soy - brill with gilled salmon

suzy have you been drinking innocent smoothies? they're doing a fab beetroot carrot and apple one just at the mo - its a gorgeous colour

Beef with pak choi mushroom and noddles stir fry cumin sea salt ginger red onion etc, gorgeous!

Actually I have a wonderful recipe for a slow cooked lamb curry with beetroot
but it's midnight now and i am turning into a pumpkin

get a piece of foil and make a sort of temp roasting dish. scrub the beetroot and top and tail. cut them to roast potato size. Stick in the foil with a glug of oil, a couple of garlic cloves you've flattened so the skin breaks, and black pepper. If you have carrots cut em into similar size chunks and add em, also fresh thyme is great with this. Roast at about 180c for about an hour.

Make a beetroot, cashew nut and parmesan dip. Just whizz the beetroot(s) with a handful of cashews and tablespoon or two of parmesan. It makes a gorgeous bright purple dip you can give as a snack with breadsticks and crudites.
