Anyone got a traditional no tomato/no beans/no garlic texan chili recipe?

I found out recently that the very first texan chilis didn't have any of these ingredients. I've never made it this way before and would like to try, but would rather use a recommended recipe than just pick one out of google.

Actually I don't mind if it has garlic in or not.

Really weird that you have just asked that, I have a new Rachael Ray cook book (she's American) and I was just inspired by the recipe to use on Friday when SIL is coming for dinner. Here it is...

Quick Chill Con Carne on the Tex Side
1.5lb beef mince
1tbsp extra virgin olive oil
1/2 an onion
4 cloves garlic
1/2 bottle of beer (or non alcoholic or twice the amount of broth)
1/2 cup beef broth
1 tin of chopped tomatoes (blend if desired)
2-3tbsp chilli powder (that's not a typo!)
1-1.5tbsp ground cumin
4 shakes of tabasco
Salt

Cook beef and oil over a high heat, add garlic and onion until translucent. Add beer, broth, tomatoes, seasonings & salt. Bring to boil and then simmer until ready to serve. Serve with tortilla crisps and refried beans.

There is another recipe which makes Chilli Con Queso* which is what I will be making.

Make above recipe and mix in the following sauce:

1 clove garlic
4oz jalapenos
1tbsp extra virgin olive oil
1tbsp flour
1/2 cup milk
1/2 cup grated cheese

Saute garlic and jalapenos in oil over medium heat. Add flour, stir in milk, when mixture thickens add cheese. Fold into chilli.
