no just fry in pan with little butter and olive oil for 3 mins each side then leave to rest somewhere warm. Sauce on steak not good imo

A peppercorn sauce is nice I find, on your spuds.

Crush some black peppercorns nice and coarsely, press into steak, fry as instructed by cd, then deglaze the pan with a bit of red wine and stir in some double cream or creme fraiche to make a luvverly sauce. Or skip the cream bit.

do i use flat pan or grdidle?

One I do is - after removing steaks from pan to rest, pour in double cream, splash of white wine or dry sherry, and heaped teaspoon of wholegrain mustard, plus salt and black pepper, and stir for a couple of mins.

griddle.

you will get lots of lovely branding if you make it v hot and oil the meat, not the pan.

snowleopard · 14/02/2006 17:41

Either pan or griddle is fine. Griddle will get you nice stripes and less fat (irrelevant if dousing in cream anyway!). If griddle, get it very hot and once steaks are in, don't try to move them until after a few minutes, as they'll stick at first until they seal.

Griddle. Easy sauce is to stir a dollop of wholegrain mustard into some creme fraiche & serve at room temperature.

Enid · 14/02/2006 17:44

I would do that mustard and creme thing on the potatoes

leave the steak plainly griddled

griddle

Highlander · 14/02/2006 18:29

slap your DH in the eye then slap the steak on top

For yourself - peppercorn sauce and mashed spuds

FrayedKnot · 14/02/2006 18:59

Cream, onions, mushrooms & a glug of brandy.

Mmmmmmmmmm
