52% dark chocolate for Ottolenghi choc fudge cake?

52% sounds like just bog standard dark choc to me....

I've had this before with Ottolenghi recipes. I remember seeing on a blog Ottolenghi did that the thing to do is to combine a mixture of chocolate bars with higher and lower cocoa solids to get an average of around this.

thanks, but i can't find anything with less than 70%; will probably risk it, or use milk choc as well; any views as to whether this will be a disaster...?

It won't be a disaster but will probably be richer/less sweet than the effect he is aiming for. I imagine Bournville would be roughly this % maybe a bit less?

Lidl. They have 3 or 4 different percentages good white choc too, works very well with Nigel Slaters white choc mousse with cardamom

nothing at 2 local shops, so have risked with dark choc Shock; will let you know how it goes.....
