I need a good vegetarian paella recipe please

I normally use chorizo and chicken but I have got friends coming round who are veggie and I figured a seafood paella would be good .

They do eat fish so not actual proper veggies .

Any recipes for me ?

Oh I was just going to suggest a 100% vegetarian paella recipe but since they eat fish then couldn't you just substitute chicken with prawns?

Anyway, this is how I make my paella should you wish to use it, you don't have to use all of the veg ingredients though if you don't like courgette or mushroom etc.

Easy cook rice (6-8 oz for 4 people)
Chopped Onions
Turmeric, paprika
Stock
Diced Courgette
Diced Red pepper
Diced Mushrooms
Sweetcorn
Sundried tomatoes
Olives
Kidney beans

Fry onions in olive oil until they are soft, add the rice and spices until it gets a good coating of oil. Add everything else and cover with the stock (it should only just about cover it) and let it simmer for about 15-20 minutes. Check its progress before deciding whether to add more stock. Mine is normally done after another 10 minutes or so when the water has evaporated and the rice is a nice soft texure.

If you have a good paella recipe, just do it exactly the same but use fish stock not chicken stock and put the seafood in towards the end as it needs very little cooking and over cooked seafood is not nice. A good way to make shop bought fish stock really great is to simmer some prawn heads in it for a bit then strain off before you use it. Definitely use real saffron as it's part of the flavour and not just the colour.

I've made the version of Ottolenghi's multi veg paella from Plenty. The one in the Guardian column is the original which the book is based on. It's very very delicious.
