HELP! I have lots of bananas to use up and my son is allergic to eggs!!

Any ideas for recipes? DS is 13 months, DD is 3.5 so preferably not too laden with sugar. they both love peanut butter so anything containing that would be a bonus!

Oh and I want to start making it in the next 30 minutes - no pressure! Grin

I think you can use banana as a substitute for eggs in most cakes.

Otherwise I would just whizz it up with some strawberries and milk/yoghurt for a smoothie treat.

peel them, chop them, freeze them, then whizz them in the blender to make banana ice cream!

Ooh I thought you couldn't freeze bananas Pippinella? I found an egg-free muffin recipe on MN recipes after I posted this which are now in the oven but still have plenty left!

Bit late but I always freeze them in their skins when a bit ripe to save up enought to make banana bread - the skins go black but the bananas are fine to cook with.
I think that I saw James Martin, on TV, freeze them then blend with buttermilk to make icecream.

You can slice them up and fry them in butter, then pour a bit of orange juice into the pan and sizzle for a while to make a sauce. Could add brown sugar at this point too, but still nice without it. Then pour sauce over bananas, and cream too, and eat up. Exceedingly yummy!

Banana scones are yummy and have no eggs in them (quite a few recipes on google all fairly similar - would probably be good made with wholemeal flour)
