Fresh tagliatelle with really crispy bacon, pine nuts toasted in the bacon fat, mix it together in the pan with some baby spinach which will wilt in the residual heat, then dress with an olive oil and lemon juice dressing. Takes about 5 minutes and is yummy.

Look at the clock with horror,
Scrub enough large potatoes to feed one per person,
Dry potatoes on apron with kitchen towel, prick with knife, bung in oven until cooked.
Heat beans in saucepan
Pour over potatoes

Boil pasta. Heat frying pan. Add butter and olive oil. Throw in lardons. Put 1.5 eggs per adult and a sloop of cream in a jug and whisk. Add plenty of black pepper, a little salt and plenty of grated grana padano/parmesan/pecorino. Drain pasta. Stir in lardons and eggy cream until thickened and saucy. Eat. 10 minutes and totally delicious.

Sometimes add courgette or mushrooms for health.

Chicken leek and ham pie - chicken pieces, bacon lardons, leeks fried together, mix with a tub of creme fresh and some mustard and some herbs, put in an ovenproof dish. Cover with ready rolled puff pastry and bung in the oven on 180 for 45 mibs.

Prawn pasta pesto.

Boil pasta.
Heat pesto and Creme fraiche (equal quantities)
Add prawns to heat through.

Mix with cooked pasta.

All in less than 15 mins. :)

Or giant sausage roll -

Mix sausage meat, grated chedder, bit of tomato ketchup, lots of mixed herbs together with an egg. Put mixture in middle of ready rolled puff pastry and fold pastry over. Bake for about an hour.,

cook some spaghetti. when nearly done, heat some chopped red chilli and garlic in olive oil (low heat so it doesn't burn). toss drained spaghetti in flavoursome oil, add salt/pepper/parmesan if desired, scoff.

when dh is out i like to make this with added king prawns.

Spaghetti with prawns and rocket. Cook some spaghetti. Defrost some prawns. Drain spaghetti and add olive oil, lemon juice, prawns and rocket, plus some black pepper. Mix and serve.

Super easy, just need to have fresh rocket in.

Paprika Chicken. Cheap, quick, easy.
Two chicken thighs per person, skinned. Coat in smoked paprika, chuck in dry frying pan, keep turning. Add onion, celery, courgette. Pint and a half of chicken stock, chuck in when onions are cooked, along with a couple of chopped carrots, some mixed herbs and a bayleaf. Simmer for 45 minutes, serve with mash.

Spaghetti (Barilla brown spaghetti) cooked with frozen spinach and a chicken stock cube, all drained then add in a good dollop of pesto and maybe a little of the cooking water. Serve with heaps of parmesan and black pepper.

bag of frozen prawns, jar of uncle bens sweet and sour sauce, boil a bit of rice Grin
or tagliattelle, tin of salmon, hard boiled eggs cut into quarters topped in a cheese sauce and baked.
or last nights favourite, bag of sainsbo's frozen char grilled mediterannean veg cooked then put on a sheet of puff pastry topped with cheddar and mozzarella
I seek easy inspiration most days but can cook fancy stuff in I can be bothered. fish an chips tonight Smile

or ... hard boiled eggs, make a mixture of raw mince, onion, herbs, seasoning and an added oxo cube, cover the egg in a layer of the mince and bake in the oven until cooked. serve with some cooked noodles and a sauce made of passatta with a tin of condensed tomato soup added and a squirt of tabasco and worcestershire sauce. can be done for veggies with the sos mix stuff too.

Coconut milk, garlic, chilli, lime, ginger, soy sauce, sugar, corriander. Whizz in blender, add chopped chicken, marinate. Take chicken out and bbq or pan fry. Cook sauce through and serve with rice.

Boil some pasta till almost al dente, bung it in a casserole dish, mix in 1 can tuna, 1 can mushroom soup, handful of sliced celery, handful of sliced spring onions, stir together. Top with good covering of cheese (I like Red Leicester). Put in oven for 25mins until cheese on top bubbling.
