cheese /white sauce going weird with milk!! i know its sounds weird

make my sauces as i have been doing for years but have noticed that they go kinda weird when the milk is added , they lose the runny consistency and go all glue like, my mum thinks it the way its now pasterised, as she has the same thing happening, the saudce is fine but just a mass rather than a liquid
its not the milk amt
anyone else notice this weird thing

Never noticed this, but I make mine the all in one way, ie putting in all the ingredients cold, then heating and stirring with balloon whisk.

Not had probs with mine. If not the milk could it be the flour?
Has the milk been frozen then defrosted before cooking? Only ask as my mum defrosted a 2-pinter last week and it came out like water - yet had been fine when went in freezer week before. If the milk is too thin it might make the sauce more glue-like - perhaps?
