How could I have made this pasta/aubergine dish "sing".

DH was out the other night and I wanted a quick easy meal. I had a bit of aubergine left over so I decided to do an easy pasta dish. I grilled the aubergine and then cut it into chunks and heated some olive oil with some lemon, chilli and garlic then tossed all of that with the pasta and some lovely creamy goats cheese.

It was delicious but it felt like it was missing something. It felt like it needed something sweet almost to balance out the flavours. Any suggests?

i would have thought the goats cheese would have killed it, tbh. up til then it sounded really good. more chili, more lemon, more coriander, yum. possibly some green beans.

Aitch, that could be it actually. The creaminess was nice but perhaps the cheese wasn't a good call. I might try sans cheese another day.

in hfw's veg book there's an aub and potato roast that we have a lot... unbelievably good and similar ingreds.
