Bought a tin of Baxters - tastes like drinking marmite, which is ok for me cos I like marmite, but I want it to taste like onion soup iyswim. So if anyone has a good tried and tested recipe, I'd be grateful.

Onions. Definitely. Other than that...er...don't know. Am I any help?

Hm - you naughty mouse. Want a recipe. Have onions - am bored. Onion soup better for me than cod's choc covered mountains (which I really want to make ).

ok, this is mine

For 3 bowls:
Put about 40g of butter in a saucepan, , when melted add 3 onions (sliced), salt and pepper. Let the onions brown and soften, and cook on a low heat for about 30mn.
Then add some beef stock (I think about 700ml) and cook for another 15mn.
In the meantime brown some very thin slices of baguette and grate some cheese (emmenthal or gruyere if possible). Pour the soup into oven proof bowls, top with slices of baguette and cheese and put under the grill until the cheese bubbles up.
Miam miam miam!!
Dh's favourite btw!!

I have the same recipe as fg but I add garlic and a glass of white wine 2mn before adding the stock. Any excuse for some booze
