Need a recipe to use up carrots and mushrooms.....

Just clearing out the fridge ahead of a shopping delivery tomorrow. I have a huge bag of carrots and a huge box of mushrooms that are just on the turn.

I can all in at the butchers or Tesco Express tomorrow to get anything I may need to use them up in a useful recipe!

Ideas???

Carrot & corriander soup? Carrot cake?

As for the mushrooms, cream of mushroom soup? Or mushrooms risotto, or pan fried chicken & mushroom sauce.

I made this carrot cake on Saturday, it was really good.
Also this recipe for mushroom chicken is gorgeous

I've tried loads from it.

i would sweat the carrots and onions in butter slowly for about an hour and then freeze in batches to give you instant soup (just add stock and herbs) for those days when you have nothing in
then i would fry the mushrooms with garlic until soft, add some white wine and reduce to make a lovely pasta sauce
