Homemade burgers? You can prepare tonight and mix will taste better tomorrow then just serve in a crusty roll and salad. If you feel u want more you can make a coleslaw/ potato salad easily enough and you can also prepare night before :)

I've made a delish moroccan lamb dish (easy peesy) when I've 4+ over for dinner. Plonk it all on the table and everyone help themselves. Buy nan bread and use this to soak up the sauce mmmm. You're guests will think you are a diva at cooking. Buy fresh mint for tea afterwards to complete your moroccan evening.

Asparagus. Tis the season to be merry and sicken ourselves.

Cut into batons. Fry gently in a little oil for about 5 mins. Add butter and lemon juice. Yum.

I like to do a fancyish sausage casserole. (this recipe is for 2) Brown 6 sausages and chop up. Dice some potatoes (leave skin on) and cook until tender. In a large pan soften a diced red onion and a clove of garlic. Add a tin of chopped tomatoes and a tin of kidney beans in chilli sauce, add sausages and potatoes and season to taste. cook for another 15-20 mins. Serve with a big bit of lovely bread :)

By fancy I mean filling obviously :o

Quickly blanche some asparagus, wrap in Parma ham, then griddle. Serve with shop bought hollandaise. Follow with M&S mushroom risotto tarted up with sauté wild mushrooms and a sprinkling of chopped parsley - pass off as home made of course. Then a cheese platter to end.
Starving now.
