Can I substitute Muscovado (sp?) sugar with brown sugar light or dark?!

Depends on whether the recipe calls for light or dark muscovado - it comes in both. Choose accordingly. Muscovado is a "protected" name for sugar, as is Demerara, more than an actual type. I think it's to do with where it comes from but can't remember.

No, it's to do with the processes. And muscovado is generally darker and more molasses-y, so yes, use dark brown sugar (although you can still get light muscovado as well).
